Satay Peanut Sauce
3 cloves garlic, crushed
2 tablespoons canola oil
1 cup water
2 fresh red jalapeño peppers, chopped
4 tablespoons fresh lime juice
1 teaspoon salt
2 tablespoons brown sugar
2 tablespoons soy sauce
1 cup smooth or crunchy peanut butter
1 can coconut milk (14 fl. oz.)
In a small pan, sauté the garlic in the oil until golden. Add the water, peppers, lime juice, salt, brown sugar, soy sauce, peanut butter, and coconut milk and stir until well-blended. Simmer the sauce for about 10 minutes, stirring frequently. To be used with chicken, beef or pork satays.
Makes 3 cups.
